Parmesan Pretzel Chicken

Ingredients
- 2 large chicken breasts
- 2 cups finely crushed pretzels
- 2 eggs
- 1/3 cup Italian dressing
- 3 tablespoons lemon juice
- 1/2 cup grated parmesan cheese
- 3 tablespoons olive oil
Directions
- 1 Preheat oven to 300 degrees.
- 2 Add olive oil to skillet. Heat over medium-heat.
- 3 Slice chicken breasts in half to make 4 thin fillets.
- 4 Crush pretzels in a bag. NOTE: Pretzels must be finely crushed to avoid burning.
- 5 Add parmesan cheese to crushed pretzels. Shake bag to mix.
- 6 Whisk 2 eggs in a shallow bowl.
- 7 Add Italian dressing and lemon juice to eggs.
- 8 Coat chicken in egg mixture then put in bag and shake to coat.
- 9 Add chicken to skillet and cook 3 minutes each side or until coating is browned.
- 10 Place chicken in a foil lined baking dish and place in oven for 20-30 minutes.
