Parmesan Pretzel Chicken

  • 2 large chicken breasts
  • 2 cups finely crushed pretzels
  • 2 eggs
  • 1/3 cup Italian dressing
  • 3 tablespoons lemon juice
  • 1/2 cup grated parmesan cheese
  • 3 tablespoons olive oil


  • 1 Preheat oven to 300 degrees.
  • 2 Add olive oil to skillet. Heat over medium-heat.
  • 3 Slice chicken breasts in half to make 4 thin fillets.
  • 4 Crush pretzels in a bag. NOTE: Pretzels must be finely crushed to avoid burning.
  • 5 Add parmesan cheese to crushed pretzels. Shake bag to mix.
  • 6 Whisk 2 eggs in a shallow bowl.
  • 7 Add Italian dressing and lemon juice to eggs.
  • 8 Coat chicken in egg mixture then put in bag and shake to coat.
  • 9 Add chicken to skillet and cook 3 minutes each side or until coating is browned.
  • 10 Place chicken in a foil lined baking dish and place in oven for 20-30 minutes.
