Microwave Rice Pilaff

Ingredients
- 1/4 cup butter
- 1 1/2 cups long-grain rice, white
- 1 medium onion, finely chopped
- 2 garlic cloves, crushed
- 1 stalk celery, finely chopped
- 3 cups chicken broth
- 1/4 teaspoon dried thyme
- 1 tablespoon parsley
Directions
- 1 In a 2 qt casserole dish, combine butter, rice, onions, celery and garlic.
- 2 Microwave 5 minutes on High.
- 3 Add chicken broth, thyme and parsley.
- 4 Cover and cook 15 minutes stirring twice during cooking time.
- 5 Let stand 10 minutes to finish cooking before serving.
