Lemon Butter Curry Catfish

  • 2 lbs catfish fillets
  • 1/2 teaspoon salt
  • ground pepper
  • 2 cups cooked rice
  • 1/2 teaspoon salt
  • 2 teaspoons grated onions
  • 1 teaspoon curry powder
  • 6 thin lemon slices
  • 4 tablespoons butter
  • chopped fresh parsley


  • 1 Rinse the fish and pat dry, then cut into bite-size pieces. Arrange in a well-greased baking dish and season with salt and pepper.
  • 2 Stir together the rice, onion, and curry powder and spread over the fish. Top with lemon slices and dot with butter.
  • 3 Bake at 350 degrees until fish flakes easily, about 25 to 35 minutes. Uncover for the last few minutes for any moisture to evaporate. Sprinkle with parsley and serve.
