Fiesta Potato Pile

  • 4 large red potatoes, cut into 1-inch pieces
  • 1/2 teaspoon salt (for boiling potatoes)
  • 1 tablespoon chili powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 3 tablespoons canola oil
  • 1/2 cup shredded cheddar cheese or 1/2 cup monterey jack cheese or 1/2 cup monterey jack pepper cheese
  • 1/4 cup sour cream
  • 1/2 cup prepared salsa
  • 1 green onion, greens sliced thinly (optional for garnish)


  • 1 Boil potatoes in salted water until a knife can easily poke through them. Drain into a colander and let them steam off for about 5 minutes.
  • 2 Heat oil in a large frying pan over medium to medium high heat and add potatoes.
  • 3 Add seasonings to potatoes and cook until they are golden brown and the skins are crispy. About 10 minutes.
  • 4 Plate potatoes and top with remaining ingredients.
  • 5 Enjoy!
