Country Yellow Squash Bake

  • 10 large yellow squash, cut into pieces
  • 1/2 cup onion, chopped
  • 1 (8 ounce) carton sour cream
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried basil
  • 1/8 teaspoon ground red pepper
  • 1 cup soft breadcrumbs
  • 1/2 cup cheddar cheese, shredded
  • 1/4 cup butter, melted
  • 1/2 teaspoon paprika


  • 1 Cook squash and onion in boiling water 10 or 15 minutes or until tender. Drain well, and mash.
  • 2 Combine squash mixture, sour cream, salt, dried basil and red pepper, stirring well.
  • 3 Spoon mixture into a greased 2 quart casserole.
  • 4 Combine breadcrumbs, cheddar cheese, margarine and paprika and toss well. Sprinkle over squash mixture.
  • 5 Bake, uncovered, at 300 degrees for 30 minutes or until thoroughly heated.
