Ingredients

• 1/4 cup shortening
• 1/2 cup sugar
• 1 egg
• 1 teaspoon vanilla extract
• 1/2 cup besan
• 1/2 cup whole wheat flour
• 1 teaspoon baking powder
• 1/2 cup finely grated carrot

Directions

• 1 Peel and finely grate one full carrot.
• 2 Cream together the shortening and sugar.
• 3 Mix in the egg.
• 4 Add in the flour and baking powder.
• 5 Fold in finely grated carrot until blended well.
• 6 Drop by spoonfuls onto greased cookie sheet.
• 7 Bake at 375 for 10-13 minutes.
