Whole Wheat Oat Blueberry Muffins

Ingredients
- 1/2 cup whole wheat flour
- 1/2 cup flour
- 1/2 cup oat bran
- 2 teaspoons baking powder
- 1/4 cup honey
- 1 egg
- 2 tablespoons extra virgin olive oil
- 1/2 cup apple juice
- 2 teaspoons vanilla extract
- 1 teaspoon lemon juice
- 1 cup fresh blueberries or 1 cup frozen blueberries
Directions
- 1 Preheat oven to 375.
- 2 Line muffin cups with muffin paper.
- 3 In a bowl, mix all dry ingredients, excluding blueberries.
- 4 In a blender, mix all wet ingredients.
- 5 Add to dry ingredients.
- 6 Stir in blueberries.
- 7 Pour mixture into muffin cups.
- 8 Bake 20 minutes.
- 9 Remove from pan and let cool.
- 10 Serve and enjoy.
