Star Fruit Jam

Ingredients
- 1 1/4 kg carambolas
- 3 1/2 cups water
- 750 g sugar
- 2 lemons, juice of
- 1 teaspoon salt
Directions
- 1 Trim the winged edges from the carambola fruit and place in a saucepan.
- 2 Add water and boil until tender[approx 15 minutes].
- 3 Add the sugar, lemon juice and salt and boil until the jam sets.
- 4 Pour into sterilsed jars and seal.
