Microwave Rice Pilaff

Time: 25 mins

Ingredients

  • 1/4 cup butter
  • 1 1/2 cups long-grain rice, white
  • 1 medium onion, finely chopped
  • 2 garlic cloves, crushed
  • 1 stalk celery, finely chopped
  • 3 cups chicken broth
  • 1/4 teaspoon dried thyme
  • 1 tablespoon parsley

Directions

  • 1 In a 2 qt casserole dish, combine butter, rice, onions, celery and garlic.
  • 2 Microwave 5 minutes on High.
  • 3 Add chicken broth, thyme and parsley.
  • 4 Cover and cook 15 minutes stirring twice during cooking time.
  • 5 Let stand 10 minutes to finish cooking before serving.
  • 6 Serves 6.
