Garlic and Lemon Carrots

Ingredients

  • 1 lb carrot, peeled and cut into 1-inch slices
  • 1 cup chicken broth
  • 1 tablespoon margarine
  • 1 tablespoon shallot, minced
  • 1 teaspoon sugar
  • 1/8 teaspoon black pepper
  • 2 -3 garlic cloves, minced
  • 1 tablespoon lemon juice

Directions

  • 1 Combine everything EXCEPT the lemon juice in a medium saucepan; cook, uncovered, over medium heat, approximately 15-20 minutes.
  • 2 Stir often until carrots are tender and a little liquid is remaining.
  • 3 Stir in the lemon juice and serve.
