Twice-Baked Alfredo Potatoes

Time: 50 mins

Ingredients

  • 2 large baking potatoes
  • 1 cup alfredo sauce
  • 1 teaspoon garlic powder
  • 1/2 teaspoon pepper
  • 1/4 teaspoon thyme, crush between fingers to release stronger flavor
  • 1 egg, beaten
  • 8 ounces shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • paprika

Directions

  • 1 microwave potatoes til tender.
  • 2 slice in half lengthwise.
  • 3 scoop out insides leaving thin shell of potato.
  • 4 mix scooped out potato and rest of ingredients well til creamy.
  • 5 pile into potatoes.
  • 6 sprinkle with paprika.
  • 7 bake, covered, at 350*- 20 minutes.
  • 8 uncover, bake 10 minutes longer.
  • 9 serves 4.
