Twice-Baked Alfredo Potatoes

Ingredients
- 2 large baking potatoes
- 1 cup alfredo sauce
- 1 teaspoon garlic powder
- 1/2 teaspoon pepper
- 1/4 teaspoon thyme, crush between fingers to release stronger flavor
- 1 egg, beaten
- 8 ounces shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- paprika
Directions
- 1 microwave potatoes til tender.
- 2 slice in half lengthwise.
- 3 scoop out insides leaving thin shell of potato.
- 4 mix scooped out potato and rest of ingredients well til creamy.
- 5 pile into potatoes.
- 6 sprinkle with paprika.
- 7 bake, covered, at 350*- 20 minutes.
- 8 uncover, bake 10 minutes longer.
- 9 serves 4.
