Ingredients

• 1 bunch asparagus, washed and trimmed
• 2 tablespoons olive oil (divided)
• 1 cup olive oil (divided)
• salt and pepper
• 1 lemon, juice of

Directions

• 1 Preheat oven to 400 degrees.
• 2 Lightly coat asparagus with 2 tablespoons oil and salt and pepper.
• 3 Bake for 10 minutes.
• 4 Whisk together remaining 1 cup oil and the lemon juice.
• 5 Add salt and pepper to taste.
• 6 Remove asparagus from oven, and set on serving platter and drizzle with dressing.
