Ingredients

• 1 egg white
• 1/2 cup packed light brown sugar
• 1 dash vanilla extract (or more)
• 4 cups pecans

Directions

• 1 Preheat oven to 275.
• 2 Line a cookie sheet with wax paper and spray it with nonstick cooking spray.
• 3 Beat egg white until stiff.
• 4 Add brown sugar and vanilla and beat until smooth.
• 5 Mix in pecans and stir until evenly coated; pout on cookie sheet and spread out.
• 6 Bake for 10-15 minutes or until browned.
