Make-Ahead Mashed Potatoes

Ingredients

  • 5 lbs potatoes
  • 8 ounces cream cheese
  • 1 cup sour cream
  • 1/4 cup onion, chopped fine
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup margarine
  • 1 tablespoon margarine

Directions

  • 1 Peel and boil potatoes.
  • 2 Mash potatoes.
  • 3 Add cream cheese, sour cream, onion, salt and pepper and 1/2 cup margarine.
  • 4 Mix well with mixer.
  • 5 Put in a 13 x 9 inch pan.
  • 6 Dot top with 1 Tablespoon margarine.
  • 7 Refrigerate 1 to 2 days.
  • 8 Bake at 350 degrees Fahrenheit for 45 minutes.
