Wonderful Pumpkin Waffles

Ingredients

  • 1/2 cup canned pumpkin puree
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 2 eggs, separated
  • 1/2 cup melted butter
  • 2 tablespoons brown sugar (can use 3 tablespoons for a sweeter waffle)
  • 3/4 cup all-purpose flour
  • 2 tablespoons all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

Directions

  • 1 Prepare an electric waffle maker.
  • 2 In a large bowl whisk together pumpkin puree, sour cream, milk, 2 egg yolks, melted butter and brown sugar.
  • 3 In another bowl combine 3/4 cups plus 2 tablespoons flour, baking powder, baking soda, salt, cinnamon and nutmeg.
  • 4 Add the dry ingredients to the pumpkin mixture; mix well until combined.
  • 5 In another bowl beat the egg whites until stiff peaks form; fold into the waffle mixture until combined.
  • 6 Bake in a preheated waffle mixture.
  • 7 Delicious!
