Wonderful Pumpkin Waffles

Ingredients
- 1/2 cup canned pumpkin puree
- 1/2 cup sour cream
- 1/2 cup milk
- 2 eggs, separated
- 1/2 cup melted butter
- 2 tablespoons brown sugar (can use 3 tablespoons for a sweeter waffle)
- 3/4 cup all-purpose flour
- 2 tablespoons all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
Directions
- 1 Prepare an electric waffle maker.
- 2 In a large bowl whisk together pumpkin puree, sour cream, milk, 2 egg yolks, melted butter and brown sugar.
- 3 In another bowl combine 3/4 cups plus 2 tablespoons flour, baking powder, baking soda, salt, cinnamon and nutmeg.
- 4 Add the dry ingredients to the pumpkin mixture; mix well until combined.
- 5 In another bowl beat the egg whites until stiff peaks form; fold into the waffle mixture until combined.
- 6 Bake in a preheated waffle mixture.
