Mixed Green and Mandarin Orange Salad

Ingredients

  • 1 (15 ounce) can mandarin oranges in light syrup
  • 1 tablespoon olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1/4 teaspoon black pepper
  • 3 cups chopped romaine lettuce
  • 3 cups baby spinach
  • 1 cup chopped red cabbage

Directions

  • 1 Drain mandarin oranges, reserving oranges in a large bowl and juice in a medium bowl.
  • 2 To the mandarin juice, add olive oil, vinegar, dijon mustard and pepper. Whisk until blended.
  • 3 In the large bowl, add lettuce, spinach and cabbage to the reserved oranges.
  • 4 Pour dressing over all and toss well to combine.
  • 5 Serve immediately.
