Mixed Green and Mandarin Orange Salad

Ingredients
- 1 (15 ounce) can mandarin oranges in light syrup
- 1 tablespoon olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon Dijon mustard
- 1/4 teaspoon black pepper
- 3 cups chopped romaine lettuce
- 3 cups baby spinach
- 1 cup chopped red cabbage
Directions
- 1 Drain mandarin oranges, reserving oranges in a large bowl and juice in a medium bowl.
- 2 To the mandarin juice, add olive oil, vinegar, dijon mustard and pepper. Whisk until blended.
- 3 In the large bowl, add lettuce, spinach and cabbage to the reserved oranges.
- 4 Pour dressing over all and toss well to combine.
- 5 Serve immediately.
