Korokke - Japanese Potato Croquettes

Ingredients

  • 3 -4 cups leftover mashed potatoes
  • 1 cup corn
  • 1/2 cup flour
  • 1 egg, beaten
  • 1 cup panko (Japanese bread crumbs)
  • oil (for frying)

Directions

  • 1 Mix together mashed potatoes and corn.
  • 2 Make into patties that are fat but flat.
  • 3 Dip each pattie first in flour, then beaten egg, then panko.
  • 4 Fry in hot oil.
  • 5 Drain on paper towels.
  • 6 Serve with Tonkatsu sauce, or other Asian sauce.
