Korokke - Japanese Potato Croquettes

Ingredients
- 3 -4 cups leftover mashed potatoes
- 1 cup corn
- 1/2 cup flour
- 1 egg, beaten
- 1 cup panko (Japanese bread crumbs)
- oil (for frying)
Directions
- 1 Mix together mashed potatoes and corn.
- 2 Make into patties that are fat but flat.
- 3 Dip each pattie first in flour, then beaten egg, then panko.
- 4 Fry in hot oil.
- 5 Drain on paper towels.
- 6 Serve with Tonkatsu sauce, or other Asian sauce.
