Firecracker Chicken Stir Fry

Ingredients

• 2 tablespoons oil
• 3/4 lb chicken breast, cut into chunks
• 1/2 onion, cut into chunks
• 1/2 red bell pepper, cut into chunks
• 1/2 green bell pepper, cut into chunks
• 6 dried red chili peppers
• 1/4 cup ketchup
• 1 tablespoon hoisin sauce
• 1 teaspoon hot Chinese chili paste
• 1/2 cup peanuts

Directions

• 1 Heat large skillet or wok until very hot.
• 2 Add oil.
• 3 When oil is hot add chicken and stir fry until done, just a few minutes.
• 4 Remove chicken.
• 5 Add remaining ingredients except for peanuts and stir fry until tender crisp.
• 6 Add chicken back into pan.
• 7 Toss thru to reheat.
• 8 Stir in peanuts.
