Chicken With Seven Spices

Ingredients

  • 1 (2 1/2-3 lb) chicken (whole)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground turmeric
  • 1/4 teaspoon paprika
  • 1/4 teaspoon ground cinnamon

Directions

  • 1 Preheat oven to 375.
  • 2 Remove chicken skin. Rinse chicken and pat dry. Remove giblets and neck.
  • 3 Lightly spray the inside of a roasting back with nonstick cooking spray. Place chicken, breast side up, in the plastic oven bag in a shallow roasting pan.
  • 4 In a small bowl, stir together remaining ingredients. Rub this mixture evenly over chicken.
  • 5 Tie the oven bag closed.
  • 6 Roast in oven 1 to 1 1/4 hours, or until chicken is tender and no longer pink.
