Black Bean Spirals

Ingredients

  • 15 ounces black beans, rinsed and drained
  • 6 (10 inch) soft flour tortillas
  • 8 ounces softened cream cheese
  • 1 cup shredded monterey jack cheese
  • 1/2 cup sour cream
  • 1/4 teaspoon onion salt
  • salsa (for dip)

Directions

  • 1 Process beans until smooth and spread on warmed tortillas (I warm in microwave 25 seconds for easy rolling).
  • 2 Place all else in processor until smooth and spread over beans.
  • 3 Roll up tightly. Refrigerate and when ready, serve with salsa, cutting spirals into 1/2 inch pieces.
  • 4 Note: cook time is refrigeration time.
