Tapioca Pudding (using Minute Tapioca)

Time: 20 mins

Ingredients

  • 1/3 cup sugar
  • 3 tablespoons minute tapioca
  • 2 3/4 cups milk
  • 1 egg, beaten
  • 1 teaspoon vanilla extract

Directions

  • 1 Mix sugar, tapioca, milk and egg in a saucepan, let set 5 minutes.
  • 2 Cook on medium heat, stirring constantly, til mixture comes to a full boil.
  • 3 Remove from heat, then stir in vanilla.
  • 4 Cool 20 minutes, then stir.
  • 5 Serve warm or cold.
