Spinach and Mushroom Salad With Citrus Vinaigrette

Ingredients

  • 1/3 cup olive oil
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh lime juice
  • 2 tablespoons cider vinegar
  • 1 crushed garlic clove
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon dried basil
  • 1/8 teaspoon dried oregano

Directions

  • 1 Mix all dressing ingredients together and refrigerate for flavors to develop.
  • 2 Add mushrooms to dressing and toss to coat.
  • 3 Refrigerate mushroom mixture for at least 30 minutes.
  • 4 Just before serving, place spinach in a salad bowl with tomatoes and onions; add mushroom mixture and toss together.
  • 5 Top with crumbled bacon.
