Low Carb Cheesy Broccoli Chowder

Ingredients

  • 3 (14 ounce) cans chicken broth
  • 1 bunch fresh broccoli
  • 1 1/2 cups heavy cream
  • salt and pepper, to taste
  • 1 cup cooked cubed ham
  • 1/4 cup butter
  • 2 cups swiss cheese, shredded

Directions

  • 1 Clean broccoli and cut into bite-size pieces.
  • 2 Place in 4-quart pan with chicken broth.
  • 3 Bring to a boil.
  • 4 Reduce heat and cook another 5 to 7 minutes.
  • 5 Add cream, ham, salt, pepper, cheese and butter.
  • 6 Simmer for 10 minutes, adding 1/2 to 1 cup water if it seems too thick.
