Garlic Sauteed Spinach

Ingredients

  • 1 1/2 lbs baby spinach leaves
  • 2 tablespoons olive oil
  • 2 tablespoons chopped garlic
  • 2 teaspoons salt
  • 3/4 teaspoon pepper
  • 1 tablespoon butter

Directions

  • 1 Rinse spinach well in cold water; dry well.
  • 2 In a large pot, heat the olive oil and saute the garlic over medium heat for 1 minute.
  • 3 Add all the spinach, salt, and pepper to the pot; toss with the garlic and oil.
  • 4 Cover the pot and cook for 2 minutes.
  • 5 Uncover, turn heat on high, and cook for another minute, stirring until all the spinach is wilted.
  • 6 Using a slotted spoon, lift the spinach to a serving bowl and top with butter.
