Buttermilk Pecan Chicken

Ingredients

  • 1 1/3 tablespoons butter
  • 1/2 cup flour
  • 1/2 cup ground pecans
  • 2 tablespoons sesame seeds
  • 1/2 tablespoon paprika (not 1/2 t!)
  • 3/4 teaspoon salt
  • 1 pinch pepper
  • 1 egg white
  • 1/2 cup buttermilk
  • 4 boneless skinless chicken breast halves
  • 2 tablespoons coarsely chopped pecans

Directions

  • 1 Melt butter in baking dish; set aside.
  • 2 Combine flour and next 5 ingredients.
  • 3 Combine egg white and buttermilk.
  • 4 Dip chicken in egg mixture and dredge in flour mixture, coating well.
  • 5 Place chicken in baking dish, coating once with butter.
  • 6 Sprinkle with chopped pecans.
  • 7 Bake at 350 for 30 minutes or until done.
